Lamb Karahi is a hallmark of Shinwari and Pashtun cooking, originating with the Shinwari tribe of the Khyber Pakhtunkhwa region. Bone-in lamb is cooked over high heat in a wok-like karahi pan with tomatoes, ginger, garlic and green chilies until the gravy turns thick, glossy and deeply flavourful.
We slow-cook our lamb until it's fork-tender, letting the natural richness of the meat carry the dish rather than masking it with heavy spice. Served sizzling in the karahi, it's meant to be shared family-style with naan or rice.
