Kabuli Pulao is Afghanistan's national dish, and the lamb shank version is one of our most requested items. Long-grain rice is slow-cooked in a rich broth so it takes on deep, savoury flavour, then finished with sweet caramelized carrots and raisins.
The lamb shank is braised low and slow until it's meltingly tender and falls easily off the bone, served whole atop the rice. It's a generous, satisfying dish meant to be shared at the table.
